Apple Chicken Salad Recipe 

Sorry I haven’t been updating here for so long, life has been busy and some of my cooking passion and creativity just left me for a while. I am glad to say the passion and love for cooking, blogging and all that passion for life and work is burning inside me once again. I love it and feel more like myself and full of energy. (No, I still don’t exercise but I am getting to it, seriously.)

For the coming back recipe, I am going to share with you this super easy and healthy salad I love – Apple Chicken Salad.


Packing a slighty different version for my girls at almost 1am this morning, apart from my very tired soul and body,  the cooking passion and joy I used to feel came back full force all in a sudden. I was planning to toss some lettuces, tomatoes and salad dressing together, put it in the fridge and called it a day. (I know, it’s sad.)

While tossing the salad greens in the containers, a joy filled me and I started opening the fridge and getting more ingredients and condiments out. Before I knew it, the idea of apple chicken salad came to mind and my hands were on auto pilot, a few minutes in and they were done.

I was doodling over the salad but wasn’t going to eat at 1am in the morning. So, I decided  I will have the same lunch tomorrow (technically 10 hours later the same day). As I made the salad for hubby and me, auto pilot was on again and I was reaching for ingredients before I knew what I was thinking. My hands and taste buds acted like they had an invisible hard-wired connection, they worked together seamlessly and created the taste I wanted like magic. My instincts for favour, texture, fragrance and presentation were very clear picture in my mind without effort. I almost cried with joy as this amazing feeling and ability found its way back to me. I truly missed it so much. I struggled to put out new dishes I was fond of, so we started eating out a lot, (Gosh, it’s expensive and unhealthy). I hope this cooking instinctiveness wouldn’t leave me again. I didn’t know how much I missed it until I just got it back. Okay, I talked enough and here you go the yummy recipe.

Apple Chicken Salad Recipe (Serve 2)

Ingredients:
1 cup                      Shredded Chicken
3 tablespoons      Mayonnaise
2 tablespoons      Onion (finely chopped)
1/4 cup                  Apples (finely chopped)
2 tablespoons      Dill Pickles (finely chopped)
(Optional)            Roasted  Walnuts (chopped)
2-4 cups                Herb Mix Greens Lettuce
Steps:
1. In a medium bowl, except herb mix greens lettuce, mix all remaining ingredients together.
2. Add lettuces on a plate, scope half the chicken salad on top of lettuces. Enjoy.
