Seafood Cake Recipe
Ingredients:
1/2 pound Scallops, chopped
1/2 pound Shrimps, chopped
1/2 pound Salmon, chopped
1/4 cup Onion, finely chopped
2/3 cup Bread Crumbs (for cake batter)
1/4 cup Bread Crumbs (for coating)
1 tablespoon Dill Relish
1 tablespoon Mayonnaise
1 teaspoon Salt
1 teaspoon Ground Black Pepper
enough to coat pan Olive Oil or Vegetable OilCookware:
Le Creuset 5 quarts Brasier

Steps:
1. Put 1/4 cup bread crumbs into a medium bowl and set aside. In a large bowl, mix all ingredients together until well incorporate.
2. Scoop a spoonful of seafood mix, roll into ball shape and press to form a disc. Roll in bread crumbs until the surface are covered.
3. In a fry pan, add olive oil (or vegetable oil) until pan is covered over medium heat. When oil gets very hot, add seafood cakes and sear for 3 minutes or until golden brown.

4. Flip and sear for 3 minutes or until golden brown. Place cakes on a big plate lined with paper towels, soak all the excess oil off.
5. Plate it while it is hot, can be dipped in tartar sauce or cocktail sauce.
